I think your problem is that AAA are really hard to make good, and really easy to make bad. With a AAA game you can put a lot more features into a game, but your team needs to be made for the genres your making the game in. If your team is great at Tech focused games but mainly does action, your team will not do well with a sim or strat AAA game.
AAA Games aren’t quality… It’s size. You make small games, medium games, large games, but now you have Triple A games… You need to have an R&D lab to research AAA Games.
About employee you hire, there's a first phase where they aren't fully operational and when you make a game the game provides a message mentioning the employee not yet fully operational. To get higher chance to obtain good scores (~ 9) don’t make AAA Games. It is possible to get 100M units sold with Large Games, and it’s my case. I got a score 9.25 at ~ Y100 … 110M units sold. The best way to win the achievement is an MMO. You have to keep it on the market, event if the game don’t generate income.

Make the AAA title like a large game, but do a round of staff training first, maybe even two. AAA titles are expected to be markedly better than mere Large games are. Use boosts during that training to get the best impact out of it.
